Pot Roast Nachos
The big game is here and what better way to watch it than with a plate full of nachos from Da Coach himself! I first had these at Ditka’s and couldn’t stop thinking….”how have I never thought of this?”. It’s simple, sure, but so damn delicious that it needs to be shared. There’s no specific measurements….just eyeball it for you or your crowd. You only need a bit of pot roast so make it a day or two before as a meal and use the leftovers for the nachos. Paired with a battle of the bands playlist….Denver artists vs Seattle artists. HUT HUT HIKE!
POT ROAST NACHOS

Tortilla chips
Pot roast (here’s a great recipe if you need one)
Cheddar jack cheese, shredded
Tomatoes, chopped
Jalapenos, chopped
Green onions, chopped
Sour cream
- If you’re using leftover pot roast, reheat it first.
- Place tortilla chips on oven safe dish and top with all ingredients except the sour cream.
- Heat under the broiler until the cheese is melted
- Top with sour cream and CHOW DOWN
