Grilled Flatbread
Summer is here! Don’t want to heat up the house by using the oven? I got you. Last year I discovered this recipe from Food52 and made it all summer long with a variety of toppings. Making the dough couldn’t have been easier (truly) and now that many of us are working from home, it’s totally doable for a weeknight. The toppings options are endless. I’ve enjoyed a pesto base with tomatoes marinated in garlic, red onion, evoo, balsamic vinegar, and s&p…then topped with burrata and basil (pictured here) or with a lemon ricotta base and shaved zucchini that’s been marinated in garlic, evoo, lemon, and s&p. Use up what’s left in your fridge….saute that italian sausage and few mushrooms you have left or grill up whatever veg needs to be consumed. You know that feeling of hearing a song from a movie and you instantly think of the movie or even a specific scene? Even if the song wasn’t written for the film? This is the food version of that. I see or think of this recipe and I’m transported to summer with visuals of the various toppings I’ve made for it. Paired with a playlist of memorable soundtracks that’ll transport you to the film.
Grilled Flatbread
3 cups bread flour
1 teaspoon kosher salt
1 teaspoon instant yeast
1 1/4 cups warm water
1/4 cup extra-virgin olive oil, plus more for brushing
- In a large bowl, combine together the flour and salt…add the yeast and mix together
- Make a well in the middle and add the oil and water, use a fork to loosely mix and combine
- Get in there with your hand and gently knead so the dough comes together
- Transfer to a stand mixer with a kneading hook and knead for 4 minutes (or do by hand for 8-9)
- Transfer the dough to a lightly oiled bowl so it doesn’t stick, cover and let rise until it doubles (about 1 hour)
- Preheat the grill (make sure grates are cleaned/oiled)
- Oil your hands and divide the dough into 4 parts, oil a baking sheet to prep for the next step
- Gently stretch the dough, let gravity do it’s thing, don’t get all OCD about the shape and place on the baking sheet
- Grill for 3-4 minutes per side, until it’s golden brown
- Top with your toppings and go at it
