Lazy Facos
It’s summer. It’s hot. It’s busy. The last thing you want to do is turn on the oven, unnecessarily heat up the place you’re trying to keep cool, and sweat just to make a meal. So don’t. Make some lazy facos (fish tacos) using already prepped ingredients, pour yourself a nice iced beverage, and keep summer simple. This one came to me when I saw the fish sticks at Trader Joe’s and I wasn’t up for putting in much effort but wanted something that felt homemade. No specific measurements for this one as it all depends on how many facos you want. Paired with a simple, easy, breezy playlist to keep things smooth sailin’.
Lazy Facos
Fish sticks
Shredded cabbage (red or green, whichever you prefer)
Corn tortillas
Mango salsa (store bought or just mix together some mango, jalapeno, red onion, lime juice, salt, cilantro)
Green sauce (this can be the TJ’s jalapeno or an avocado mashed with salsa verde, guacamole, mashed avocado on it’s own, or regular salsa verde….whatever is easy and you’re digging)
- Cook the fish sticks according to package instructions in an air fryer or in a pan on the stove. Don’t get that oven heatin’ up the joint!
- Prep your tortillas by warming up over an open flame, in a cast iron pan, or in microwave
- Place some cabbage on top of the tortilla, top with the fish sticks, mango salsa and green sauce
- Eat, do a quick cleanup, and go have some fun
