Pad See Ew

Several months ago I found my old iPod Nano in a drawer and was so intrigued as to what might be on it. I mean, as a gal that’s created 70 playlists just for this blog alone, can you imagine how excited I was? It was like someone sent me a special playlist. A friend recommended getting an adapter to see if it’ll charge back up and I was on it! Much to my surprise, I could get it charged and have a listen, although the charge doesn’t last long. Even more to my surprise was that it seemed my music hasn’t changed much in 15 years. Yes, I listen to newer music but the core, go-to, get in your soul stuff is pretty old. It made me realize that things I digitally save, don’t always store in my brain. Case in point, the amount of cookbooks on my kindle that I completely forgot I had. So I went digging just like I dug into that Nano and saw Leela Punyaratabandhu‘s Simple Thai Food, which is a fantastic cookbook and provides us this delicious Pad See Ew recipe. Paired with a playlist of songs I forgot about and rediscovered on that iPod Nano.

Pad See Ew
Serves 2

8 ounces dried rice noodles (I’ve used pad thai ones, rice flakes, just depends on what the store has)
12 ounces baby broccoli or broccoli florets, trimmed
8 ounces protein of choice (used baked tofu here but works also well with sliced or ground chicken)
2 tablespoons vegetable oil
2 eggs (leave out if vegan)
2 garlic cloves, minced
2 teaspoons salted soybean paste
3 tablespoons dark sweet soy sauce
2 tablespoons thin soy sauce
2 teaspoons distilled white or cider vinegar
1/2 teaspoon granulated sugar
Chili crisp

  • Soak or boil the noodles according to the package instructions
  • Heat the oil in a large skillet over high heat and whisk in the eggs to scramble them, add the garlic, stir and set aside in a bowl
  • Add your protein to the skillet and cook though slightly, then add the broccoli and cook until it’s a bright green
  • While the protein and broccoli are cooking, mix together in a small bowl the soybean paste, dark sweet soy sauce, thin soy sauce, vinegar, and sugar to form a sauce
  • Strain the noodles and add them to the skillet and stir fry them for about a minute
  • Add the eggs back into the skillet
  • Add the sauce and stir it all together
  • Plate it up and add some chili crisp on top
