Lasagna Soup

Within the last month or so, it seems like everyone on social media has been making Lasagna Soup. I get it. It’s an easy one pot meal, has all the same flavors, and is comforting and delicious. A few years ago, I reached out to friends asking for recipes to help us all deal with the pandemic cooking burnout (aka…”I have to make ANOTHER meal?”) and one recommended lasagna soup. So here we are. It did the job then and still delivers. Paired with a playlist of songs that seem to keep popping up on the socials as well.

Lasagna Soup
Serves 4

1 teaspoon olive oil
1 lb Italian sausage
1 yellow onion, diced
4 garlic cloves, minced
Salt and pepper
28oz can crushed tomatoes
4 cups chicken broth
1/2 teaspoon basil
1/2 teaspoon oregano
1/4 teaspoon thyme
10-12 lasagna noodles, uncooked and broken into pieces
Toppings (fresh basil, ricotta, parmesan cheese…whatever you prefer)

  • Heat olive oil in a pot and add the sausage (if encased, remove casing prior to adding the sausage to the pot) and brown for 5-7 minutes, breaking it up as it browns
  • Add the onion and garlic to the pot, toss in a pinch of salt and pepper, and saute until lightly golden
  • Add the crushed tomatoes, chicken broth, basil, oregano, and thyme and bring to a light boil
  • Place the broken noodles in the soup, stir it up, and simmer for 15 – 20 minutes (covered so you don’t lose too much moisture). Stir it a few times and practice your TikTok dance while it simmers.
  • Turn off the heat, ladle it up in bowls and top with your preferred toppings
